Ingredients of Creamy Mushroom Soup:

  • 1 pound (450g) mushrooms (button, cremini, or a mix), cleaned and sliced
  • 1 finely chopped medium onion
  • 2 cloves minced garlic
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 4 cups (946ml) chicken or vegetable broth
  • 1 cup (237ml) heavy cream
  • Salt and pepper to taste
  • 1 teaspoon thyme leaves (fresh or dried)
  • Chopped parsley for garnish (optional)

Instructions of Making Mushroom Soup:

  • Take a large pot and melt the butter over medium heat in it. Add the chopped onions and cook until they become translucent, about 3-5 minutes.
  • Add the minced garlic and sliced mushrooms to the pot. Cook until the mushrooms release their moisture and become golden brown, about 5-7 minutes.
  • Sprinkle the flour now over the mushroom mixture. Stir well to coat the mushrooms. Cook for 2-3 minutes more  to remove the raw taste of the flour.
  • Pour in the chicken or vegetable broth gradually to the mushroom mixture, stir it continuously to avoid formation of any lumps. Now bring the mixture to a simmer and  cook for about 10 minutes more, to allow the flavors to meld.
  • Reduce the heat to low, and stir in the heavy cream. Simmer for an additional 5 minutes and don't forget to stir occasionally.
  • Season the soup with salt, pepper, and thyme according to your taste preferences.
  • If you prefer a smoother texture, you can use an immersion blender to puree the soup to your desired consistency.
