Ingredients of Torta Caprese:

  • 200g (7 oz) dark chocolate (70% cocoa)
  • 200g (7 oz) unsalted butter
  • 200g (7 oz) granulated sugar
  • 200g (7 oz) ground almonds
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Powdered sugar (for dusting)
  • Optional: Whipped cream or gelato for serving

Instructions of Making Torta Caprese:

  • Preheat your oven to 180°C (350°F). Take a 9-inch round cake pan, grease it  and line the bottom of this cake pan with parchment paper.
  • Melt the dark chocolate and unsalted butter together using a double boiler or in short bursts in the microwave, stirring frequently until smooth. Set aside to cool slightly.
  • In a mixing bowl, beat the eggs and granulated sugar together until light and fluffy. Add the vanilla extract and a pinch of salt, and continue to mix.
  • Gently fold the melted chocolate and butter mixture into the egg and sugar mixture until well combined.
  • Gradually fold in the ground almonds until fully incorporated into the batter.
  • Now pour the batter into the cake pan you prepared before and spread the batter evenly.
  • Bake in the preheated oven for about 40-45 minutes or until a toothpick inserted into the center comes out with a few moist crumbs clinging to it. The cake should have a crisp top but remain moist inside.
  • Once baked, remove the cake from the oven and let it cool in the pan for about 15-20 minutes before transferring it to a wire rack to cool completely.
  • Dust the top of the Torta Caprese with powdered sugar before serving. Optionally, serve slices with a dollop of whipped cream or a scoop of gelato.
