Chicken curry is a popular and versatile dish enjoyed in various cuisines around the world. Ingredients for Chicken Curry:

  • 1 kg (2.2 lbs) chicken, cut into pieces
  • 2 large onions, finely chopped
  • 2 tomatoes, chopped
  • 2 tablespoons oil or ghee (clarified butter)
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon cumin powder
  • Salt to taste
  • Chopped fresh cilantro for garnishing

Optional Ingredients for Extra Flavor:

  • 1-2 green chilies, slit (adjust to spice preference)
  • 1/2 teaspoon fenugreek seeds (methi seeds)
  • 1/2 teaspoon mustard seeds
  • Curry leaves

Instructions of making Chicken Curry:

1. Heat oil or ghee in a large pot or pan over medium heat.

2. Add cumin seeds and let them splutter. If using fenugreek seeds and mustard seeds, add them here as well.

3. Add the finely chopped onions and sauté until they turn translucent and golden brown.

4. Add ginger paste and garlic paste. Sauté for a couple of minutes until the raw smell disappears.

5. Add turmeric powder, red chili powder, coriander powder, and cumin powder. Mix well and cook for a minute to toast the spices.

6. Add the chopped tomatoes and cook until they become soft and the oil starts to separate from the masala.

7. Add the chicken pieces to the pot and coat them well with the masala. Cook for a few minutes until the chicken changes color.

8. If using green chilies, add them at this point.

9. Add enough water to cover the chicken pieces and bring the mixture to a simmer. Cover the pot and let the chicken cook on medium heat until it's tender. Stir occasionally to prevent sticking.

10. Once the chicken is cooked, add garam masala and salt. Adjust the salt and spices according to your taste.

11. If using curry leaves, add them now for added flavor.

12. Allow the curry to simmer for a few more minutes, allowing the flavors to meld together.

13. Garnish with chopped fresh cilantro.

14. Serve the chicken curry hot with rice, roti, naan, or any bread of your choice.
