Ingredients of Pav Bhaji Recipe:

For the Bhaji:

  • 2 cups mixed vegetables (potatoes, cauliflower, carrots, peas), chopped
  • 1 large onion, finely chopped
  • 1 large tomato, finely chopped
  • 1 green bell pepper, finely chopped
  • 4-5 cloves of garlic, minced
  • 1-inch piece of ginger, minced
  • 2-3 green chilies, finely chopped (adjust to taste)
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 2 teaspoons Pav Bhaji masala
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • Butter or oil for cooking
  • Fresh coriander leaves, chopped, for garnishing
  • Lemon wedges for serving

For the Pav:

  • 8 soft buns (Pav)
  • Butter for toasting

1. Instructions of making Pav Bhaji:

2. Boil the mixed vegetables until they are soft. Drain and mash them coarsely. Set aside.

3. In a large pan, heat some butter or oil. Add cumin seeds and let them splutter.

4. Add chopped onions and sauté until they turn translucent.

5. Add minced garlic, ginger, and green chilies. Sauté for a couple of minutes until fragrant.

6. Add chopped tomatoes and cook until they turn soft and the oil starts to separate.

7. Add chopped bell pepper and sauté for a few minutes until it softens.

8. Add turmeric powder, red chili powder, and Pav Bhaji masala. Mix well and cook for a minute.

9. Add the mashed vegetables to the pan. Mix everything together and mash the vegetables further using a potato masher.

10. Add salt to taste and adjust the spices if needed. You can also add a little water to achieve your desired consistency.

11. Let the Bhaji simmer for 10-15 minutes on low heat, allowing the flavors to meld together.

12. While the Bhaji is simmering, slit the Pav buns horizontally without completely separating the halves.

13. Heat a griddle or pan and spread a little butter. Toast the Pav buns on both sides until they are golden and crisp.

14. Once the Bhaji is ready, garnish with chopped coriander leaves.

15. Serve the hot Pav Bhaji with the toasted Pav buns, lemon wedges, and additional butter on the side.

16. Squeeze some lemon juice on the Bhaji before eating for an extra tangy kick.
