Chak-Hao Amubi Kheer of Manipur | Manipuri Black Rice Kheer

Manipur is one of the seven states of North- India which are collectively called "Seven Sisters". Manipur is a very old state whose reference we get in Mahabharata. Third Pandava Arjuna got married with Chintrangada - princes of Manipur. Manipur also world famous for its dancing style which is known as " Manipuri Dance". But not for its cultural heritage, Manipur also famous for its delicious cuisine too. Chak-Hao Amubi Kheer is such a recipe which enriched Manipuri culinary. Chak-Hao Amubi Kheer also known as Manipuri Black Rice Kheer. It is a traditional dessert from the Manipuri cuisine, and it's made using black rice, which is native to the northeastern region of India. Chak-Hao Amubi Kheer  of Manipur - Recipica

Ingredients of Chak-Hao Kheer :

  • 1 cup Manipuri black rice (Chak-Hao)
  • 4 cups milk
  • 1/2 cup sugar (adjust to taste)
  • A pinch of salt
  • 1/4 teaspoon cardamom powder
  • A pinch of saffron strands (soak it before in a tablespoon of warm milk)
  • Chopped nuts (cashews, almonds, pistachios) for garnish
  • Raisins (optional)
  • Ghee (clarified butter) for frying the nuts and raisins (optional)

Instructions of Making Chak-Hao Kheer:

1. Wash the Manipuri black rice thoroughly and soak it in water for about 2-3 hours or overnight. Drain and set aside.

2. In a heavy-bottomed pan, bring the milk to a boil. Stir it occasionally so that it do not stick to the bottom of the pan.

3. Once the milk comes to a boil, add the soaked and drained black rice to it. Reduce the heat to low and cook  it simmer. You should stir it occasionally to prevent the rice from sticking at bottom.

4. Continue to simmer the rice and milk mixture until the rice is cooked and the mixture thickens. This may take around 40-50 minutes. Keep stirring to prevent the rice from sticking to the bottom and to achieve a creamy consistency.

5. Add sugar and a pinch of salt to the mixture and stir well. Allow it to simmer for an additional 10-15 minutes until the kheer thickens further.

6. Add the cardamom powder and saffron-infused milk. Mix well to incorporate the flavors.

7. In a separate small pan, heat a teaspoon of ghee and fry the chopped nuts and raisins until they turn golden brown. Add them to the kheer and mix.

8. Remove the Chak-Hao kheer from heat . 

Serving of Chak-Hao kheer:

You can serve it warm or chilled. Garnish it with additional chopped nuts if you want.
