Duck Meat Curry, also known as "Hanhor Tenga," is a flavorful and tangy duck meat curry dish from the northeastern Indian state of Assam. Here's a recipe to prepare Duck Meat Curry in Assamese style:

Ingredients of Duck Meat Curry:

  • 500 grams of duck meat, cleaned and cut into pieces
  • 2-3 tablespoons mustard oil
  • 1 large onion, finely chopped
  • 1-2 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 cup water
  • Salt to taste
  • Fresh coriander leaves for garnish

For the Tenga (Souring Agent):

  • 1-2 elephant apples (ouu tenga) or 1 lemon-sized piece of tamarind
  • 1 cup water (for extracting ouu tenga pulp) or warm water (for soaking tamarind)

Instructions making Duck Meat Curry:

1. If you use elephant apples (ouu tenga), grate them to extract the pulp. If use tamarind,  then soak the tamarind in warm water for about 15 minutes and then extract the pulp.

2. Heat mustard oil in a heavy-bottomed pan until it starts to smoke. Then, reduce the heat and let it cool for a minute or two.

3. Add chopped onions and green chilies to the hot oil. Sauté until the onions turn translucent.

4. Add ginger-garlic paste and continue to sauté for a few more minutes until the raw smell disappears.

5. Add the duck pieces to the pan. Sauté them until they start to brown slightly.

6. Add turmeric powder and red chili powder. Mix well to coat the duck pieces with the spices.

7. Pour in the extracted ouu tenga pulp (or tamarind pulp) into the pan. Stir well to combine.

8. Add water and salt to the pan. Bring the mixture to a boil.

9. Reduce the heat, cover the pan, and let it simmer for about 30-40 minutes or until the duck meat becomes tender. You may need to add more water if the curry gets too thick during cooking.

10. Check for seasoning and adjust salt and sourness according to your preference.

11. Once the duck meat is tender and the flavors have melded together, remove the curry from heat.

12. Garnish with fresh coriander leaves.
