Besan ki sabji, also known as "Besan Gatte Ki Sabzi" or "Besan Ke Gatte," is a popular North Indian dish made from besan (gram flour) dumplings cooked in a flavorful yogurt-based gravy. Gram flour batter is cooked, cooled, cut and fried, then simmered in curry. Besan ki sabzi is a curry generally made for festive occasions. It's a delicious vegetarian dish that goes well with rice or Indian bread like roti or paratha. Here's how you can make Besan Gatte Ki Sabzi:
Ingredients Require for Besan Gatte Ki Sabzi:
For making the Besan Gatte:
- 1 cup besan (gram flour)
- 1/2 teaspoon red chili powder
- 1/4 teaspoon turmeric powder
- Salt to taste
- 2 tablespoons oil
- Water (as needed)
For making the Gravy:
- 1 cup yogurt (curd), whisked
- 1 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/4 teaspoon asafoetida (hing)
- 1 teaspoon ginger-garlic paste
- 2-3 green chilies, finely chopped (you may require more or less according to your spice preference)
- 1/2 teaspoon red chili powder (this also according adjust to you taste)
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- 1-2 cups water (adjust to the desired consistency)
- Chopped coriander leaves for garnish
Instructions of making Besan Gatte Ki Sabzi :
Make the Besan Gatte first:
1. In a mixing bowl, combine besan, red chili powder, turmeric powder, salt, and oil.
2. Gradually add water and knead the mixture into a smooth and stiff dough. The dough should be firm enough to shape into cylindrical rolls.
3. Divide the dough into small portions and roll each portion into cylindrical-shaped Gatte, about 1/2-inch in diameter.
4. Take a large pot for boiling water. Add the Gatte to the boiling water and cook for about 8-10 minutes, or until they float to the surface.
5. Drain the Gatte and let them cool. Cut the Gatte into small pieces in the shape of your choice when they are cool. Now these are ready to be added to the gravy.
For making the Gravy:
1. Take a pan or kadai and heat oil in the pan over medium heat. Add cumin seeds and mustard seeds. Let them splutter.
2. Add asafoetida, ginger-garlic paste, and chopped green chilies. Sauté for a minute or two until the raw smell of ginger and garlic disappears.
3. the heat to low and add the whisked yogurt while continuously stirring to prevent curdling.
4. Now add turmeric powder, red chili powder, garam masala, coriander powder and salt to it. Cook this yogurt mixture on low heat for 5-7 minutes until it thickens and the oil starts to separate.
5. Add water to achieve the desired consistency of the gravy. Stir well and let it boil gently.
6. Add the cut Gatte pieces to the gravy. Simmer for about 10-15 minutes, allowing the Gatte to absorb the flavors of the gravy.
7. Garnish with chopped coriander leaves.
8. Serve hot with steamed rice or roti. Enjoy your delicious Besan Gatte Ki Sabji!
