"Ouu Khatta" is a traditional Assamese dish made with elephant apple (ouu) and is known for its unique sweet and sour flavor. Elephant apple, also called "ouu tenga" in Assamese, is a tangy fruit commonly used in Assamese cuisine. Here's a recipe for making Ouu Khatta:
Ingredients of Ouu Khatta:
- 2-3 elephant apples (ouu tenga)
- 1 cup jaggery (gur) or sugar (adjust to taste)
- 1-2 green chilies, slit
- 1/2 teaspoon mustard seeds
- 2-3 tablespoons mustard oil
- Salt to taste
- Water
Instructions of making Ouu Khatta:
1. Wash the elephant apples and cut them into thin slices. You can remove the seeds if you prefer a smoother texture, but traditionally, the seeds are included.
2. Heat mustard oil in a pan until it starts to smoke. Then, let it cool for a minute or two to reduce its pungency.
3. Add mustard seeds to the hot oil and let them sizzle.
4. Add the sliced elephant apples and green chilies to the pan. Sauté them for a few minutes until they start to soften.
5. Reduce the heat to low and add the jaggery or sugar to the pan. Stir well to combine.
6. Add a little water to the pan (about 1/2 to 1 cup) to create a thick syrup. The amount of water will depend on your preference for the consistency of the dish. You can adjust the sweetness and thickness by adding more or less water.
7. Cover the pan and simmer the mixture on low heat for about 10-15 minutes, or until the elephant apples become tender and the mixture thickens to your desired consistency. Stir occasionally to prevent burning.
8. Taste the Ouu Khatta and adjust the sweetness and salt according to your preference. You can add more jaggery or sugar if you prefer it sweeter or more salt if needed.
9. Once the elephant apples are soft and the Ouu Khatta has thickened, remove it from the heat.
10. Let it cool to room temperature before serving.
