Here's a simple recipe for Baanhgajor Lagot Kukura or Assamese chicken curry with bamboo shoots:

Ingredients of Baanhgajor Lagot Kukura :

  • 500 grams of chicken, cut into pieces
  • 1 cup bamboo shoots, thinly sliced
  • 2 onions, finely chopped
  • 2 tomatoes, chopped
  • 2-3 green chilies, slit
  • 1-inch piece of ginger, grated
  • 3-4 garlic cloves, minced
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 2-3 tablespoons mustard oil (traditional choice, but you can use any cooking oil)
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions of making Baanhgajor Lagot Kukura :

1. Heat the mustard oil in a pan until it begins to smoke slightly. Then, reduce the heat and let it cool down for a minute or two.

2. Add mustard seeds and cumin seeds to the hot oil. Allow them to sizzle and release their aroma.

3. Add finely chopped onions and sauté until they turn golden brown.

4. grated ginger and minced garlic. Sauté for a couple of minutes until the raw smell disappears.

5. Add the chopped tomatoes, green chilies, turmeric powder, and red chili powder. Cook until the tomatoes turn soft and the oil starts to separate from the masala.

6. Now, add the chicken pieces and bamboo shoots to the pan. Stir well to coat them with the masala.

7. Add salt to taste and cook for a few minutes until the chicken changes color and starts to brown slightly.

8. Pour in enough water to cover the chicken and bamboo shoots. Cover the pan and simmer for about 20-25 minutes, or until the chicken is cooked through and tender. You may need to add more water if it becomes too dry during cooking.

9. Once the chicken is cooked, check for seasoning and adjust salt and spices if needed.

10. Garnish the Assamese chicken curry with fresh coriander leaves.

11. Serve hot with steamed rice or Assamese rice cakes (pitha) for an authentic Assamese meal.
