Snail and Smoked pork in bamboo shoot is a popular recipe of Nagaland. This dish is made of snails (called ‘hamok‘ in Nagamese), beans, pork and bamboo shoots. Here is a recipe of the Snail and Smoked pork in bamboo shoot dish that is loved by the locals in Nagaland.

Ingredients of Snail and Smoked Pork Recipe:
- 1 kilo of smoked pork
- 1 kilo of fresh snail
- 1 large tomato
- 20-25 pcs. Beans
- 2 large Potatoes
- 1 head Naga garlic
- 1 medium sized Naga Ginger
- 5-8 Naga dried red chilly/Green Chilly
- 4 table spoon of fermented bamboo shoot
- 1 medium onion/Spring onions
Preparation for making The Dish:
- In clear water, soak the snails for 48 hrs. so that they can cleanse themselves. Don't forget to change the water every 24 hours. Rinse the snails thoroughly after 48 hours.
- With a spoon, tap the pointed end of the snail to make a hole, so that the spices can go inside, while cooking.
Instruction of making Snail And Smoked Pork:
1. Cook the pork in a pressure cooker for 40 mins to 50 mins. till it becomes tender.
2. Make a paste out the red chilies, ginger and garlic.
3. Now In another pot, put the cooked pork, the snail (Hamok- as called in Nagaland) , the chilli-garlic-ginger paste and bamboo shoots.
4. Add some water, and cook it for 30-40 mins.
5. Lastly put the beans and cook it for 5-10 minutes, put water if required.
6. Serve with warm steamed rice and enjoy.
