Ingredients of Toban Beef with Miso Sauce:

For the Beef:

  • 1 pound thinly sliced beef (such as ribeye or sirloin)
  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

For the Miso Sauce:

  • 3 tablespoons miso paste (You can take white or red which you like)
  • 2 tablespoons sake (Japanese rice wine)
  • 2 tablespoons mirin (sweet rice wine)
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 1 teaspoon grated garlic

Instructions of Making Toban Beef with Miso Sauce:

1. Prepare the Miso Sauce:

  • Whisk together the miso paste, sake, mirin, soy sauce, sugar, sesame oil, grated ginger, and grated garlic in a small bowl and  Set the sauce aside.

2. Cook the Beef and Vegetables:

  • Heat a large skillet or a Japanese hot stone pot (toban) over medium-high heat. Add the vegetable oil and minced garlic when toban is hot.
  • Once the garlic becomes fragrant, add the thinly sliced beef and cook for a couple of minutes until it starts to brown. Add a pinch of salt and pepper now to season the beef .
  • Add the sliced onions and bell peppers to the skillet and stir-fry everything together until the vegetables become tender and the beef is cooked through.

3. Add the Miso Sauce:

  • Pour the miso sauce that you have prepared over the cooked beef and vegetables. Stir very well to coat beef and vegetables evenly with the sauce.
  • Let the mixture simmer for a few minutes, allowing the flavors to meld together and the sauce to thicken slightly.

4. Serving of Toban Beef with Miso Sauce:

Transfer the Toban beef with miso sauce to a serving platter or the hot stone pot if you have one. Garnish with chopped green onions and serve the dish hot with steamed rice.
