Chana Madra Recipe of Himachal Pradesh

Ingredients of Chaa Gosht Dish of Himachal Pradesh:

  • 500 gm mutton
  • 3 tablespoon gram flour (besan)
  • 4 clove
  • 1 teaspoon ginger paste
  • 3 tablespoon mustard oil
  • 1 teaspoon coriander powder
  • 1 teaspoon garlic paste
  • 3 pieces green chili
  • salt as required
  • 1 teaspoon red chili powder
  • 1/2 teaspoon Asafoetida
  • 3 cup yoghurt (curd)
  • 2 pcs cinnamon
  • 2 bay leaf
  • 3 black cardamom
  • 2 large onion
  • 2 inches ginger

Instruction of Making Chaa Gosht:

1. Marinate the mutton pieces:
  • Take the pieces mutton in a bowl. Add ginger and garlic paste, crushed cloves, cinnamon, bay leaves and cardamom to it. To this mix add a small portion of yogurt and rub onto to meat to marinate it well. Keep it in Refrigerator for at least 5 hours.
2. Sauté spices and onions:
  • Now, Take another pan / Kadai and heat oil over medium flame.
  • Once heated, add coriander powder, asafoetida, red chili powder, green chilies and chopped ginger to it and sauté the spices for 4-5 minutes. 
  • Now add  the chopped onions and sauté until the onions turns translucent. 

3. Add gram flour and meat:
  • Once done, add  the gram flour and cook while stirring continuously. Take care that the mix does not burn.
  • Now add the marinated mutton and turmeric powder as required. Stir cook for a while.
4. Add yoghurt and cook for an hour before serving:
  • Now add the yoghurt and cook on a slow flame for about an hour. Stir occasionally and taste the salt. If require, add more to adjust. 
5. Serving of Chaa Gosht:
  • Serve the Himachali Chaa Gosht  along with Naan or just plain tawa paratha to enjoy.
