Ingredients of Chap Shoro:
For the Dough:
- 2 cups all-purpose flour
- 1/2 cup water
- 2 tablespoons vegetable oil
- Salt to taste
For the Filling:
- 1 pound minced meat (beef or mutton)
- 1 medium onion, finely chopped
- 2-3 cloves garlic, minced
- 1-inch piece of ginger, minced
- 2-3 finely chopped green chilies (adjust according to your spice preference)
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon coriander powder
- 1/2 teaspoon of red chili powder (you may adjust according to your spice preference)
- Salt to taste
- Vegetable oil for frying
Instructions of Making Chap Shoro:
1. Prepare the Dough:
- Mix the all-purpose flour and a pinch of salt in a mixing bowl.
- Knead the dough by adding water until it's smooth and elastic. You may need more or less water, so add it gradually.
- Cover the dough with a damp cloth once it is ready and let it rest for about 30 minutes.
2. Prepare the Filling:
- Heat some vegetable oil in a pan over medium heat.
- Now add cumin seeds and let them sizzle for a few seconds.
- Add the chopped onions now and sauté until they become translucent.
- Add minced garlic, ginger, and green chilies. Sauté for 2-3 minutes or until the raw smell of ginger-garlic disappears.
- Add the minced meat and cook until it's browned and cooked through, breaking it into small pieces as it cooks.
- Add coriander powder, red chili powder, and salt to taste. Mix well all of them and cook for a few more minutes until the spices are well incorporated.
- Remove the filling from heat once it is done and let it cool.
3. Assemble the Chap Shoro:
- Divide the rested dough into small, equal-sized balls (about the size of a golf ball).
- Roll each ball into a thin, round disk, similar to a small tortilla.
- Place a portion of the cooled meat filling in the center of each dough disk.
- Fold the edges of the dough over the filling to create a semi-circular or triangular shape. seal the edges by just pressing them together or by folding them. You can make Round Chap Shuro also by using two disk at a time. In that case, place filling on one disk and cover it by another.
- Take a deep frying pan and heat vegetable oil over medium-high heat.
- Carefully place the Chap Shuro in the hot oil and fry until they are golden brown and crispy on both sides.
- Remove the fried Chap Shuro from the oil and place them on a plate lined with paper towels to drain excess oil.
- Serve hot with chutney or yogurt sauce.
