Ingredients of Goi Cuon:
- 12 rice paper wrappers
- 12 cooked medium shrimp, peeled and deveined (or tofu for a vegetarian option)
- 2 ounces rice vermicelli noodles, cooked according to package instructions
- 1 cup shredded lettuce
- 1 cup fresh mint leaves
- 1 cup fresh cilantro leaves
- 1 cup bean sprouts (optional)
- 3 tablespoons hoisin sauce
- 2 tablespoons peanut butter
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1-2 tablespoons water (to adjust consistency)
- Crushed peanuts for garnish (optional)
Instructions of Making Goi Cuon:
- Prepare all your ingredients and have them ready for assembly.
- Fill a large bowl with warm water. Now dip one rice paper wrapper into the warm water for about 10-15 seconds or until it softens. Remove and place it flat on a clean surface.
- Near the bottom third of the wrapper, place a few shrimp (or tofu), a small amount of rice vermicelli noodles, lettuce, mint leaves, cilantro leaves, and bean sprouts (if using).
- Fold the bottom of the wrapper over the filling, then fold in the sides, and roll tightly to form a cylinder. Repeat with the remaining ingredients.
- For the dipping sauce, mix hoisin sauce, peanut butter, soy sauce, rice vinegar, and water in a bowl until well combined. Adjust water for desired consistency.
- Serve the spring rolls with the dipping sauce on the side. Optionally, garnish the sauce with crushed peanuts for extra flavor and texture.
