Ingredients of Kashmiri Rogan Josh
- 500g boneless lamb or mutton, cut into chunks
- 2 medium onions, finely sliced
- 2 tomatoes, pureed
- 4-5 cloves of garlic, minced
- 1-inch piece of ginger, minced
- 4-5 green cardamom pods
- 4-5 cloves
- 1 cinnamon stick
- 1 bay leaf
- 1 tsp cumin seeds
- 1 tsp fennel seeds
- 1 tsp of Kashmiri red chili powder (You may adjust according to your taste)
- 1/2 tsp turmeric powder
- 1 tsp ground coriander
- 1/2 tsp ground fennel
- 1/2 tsp garam masala
- Salt, to taste
- 4 tbsp vegetable oil or ghee
- Fresh coriander leaves, chopped (for garnish)
- Water, as needed
Preparation Instructions of Kashmiri Rogan Josh :
1.Heat the oil or ghee in a heavy-bottomed pot or pressure cooker.
2. Add cumin seeds, fennel seeds, green cardamom pods, cloves, cinnamon stick, and bay leaf. Sauté for a minute until fragrant.
3. Now add sliced onions and sauté until they become golden brown.
4. Add minced garlic and ginger. Sauté for another couple of minutes.
5. Add the tomato puree, Kashmiri red chili powder, turmeric powder, ground coriander, ground fennel, and salt. Sauté all these masalas until the oil starts to comes out from it. Stir occasionally to prevent burning.
6. Add the mutton or lamb chunks to the masala and brown them on all sides.
7. Add enough water to cover the meat. If using a pressure cooker, you can add a little less water.
8. Close the lid of the pressure cooker if you are using it and cook until the meat is tender. This might take around 20-25 minutes in a pressure cooker or longer if using a regular pot. Cooking time may vary based on the tenderness of the meat.
9. Once the meat is cooked, open the lid and check the consistency of the curry. If it's too watery, you can simmer it uncovered for a while to thicken the gravy.
10. Add garam masala and stir well. Add salt and spices and adjust according to taste you like.
11. Garnish with chopped fresh coriander leaves.
