- 1-inch piece of ginger, minced
- 1/2 cup tamarind pulp (soak tamarind in warm water and extract pulp)
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon fenugreek seeds (methi)
- 10-12 curry leaves
- 2-3 green chilies, slit (adjust to taste)
- Salt to taste
- Water (as needed)
- Fresh coriander leaves for garnish
Instructions of making Natu Kodi Pulusu:
1. Marinate the Chicken:
- In a bowl, combine the chicken pieces with turmeric powder, red chili powder, and salt. Mix well and set aside for 20-30 minutes.

- Heat 2-3 tablespoons of oil in a heavy-bottomed pan or kadai over medium heat.
- Add mustard seeds and cumin seeds. Let them splutter.

- Add the marinated chicken pieces to the pan. Sauté for about 5-7 minutes until the chicken changes color and the spices coat the meat.
