Bobbatlu of Andhra Pradesh is a stuffed sweet flatbread which is quite like famous Puran Poli of Maharashtra. Bobbatlu Recipe - Recipica

Ingredients of Making Bobbatlu:

For the Dough:
  • 1 cup whole wheat flour (chapati flour)
  • A pinch of salt
  • 1-2 teaspoons ghee (clarified butter)
  • Water, as needed
For the Filling :
  • 1 cup chana dal (split Bengal gram)
  • 1 cup jaggery (or sugar)
  • 1/2 teaspoon cardamom powder
  • A pinch of salt
For Cooking:
  • Ghee or oil for shallow frying

Instructions of Making Bobbatlu:

For the Filling :

1. Rinse the chana dal thoroughly and cook it in a pressure cooker or on the stovetop with enough water until it becomes soft and mushy.  Drain any excess water when it become soft.

2. Melt the jaggery in a separate pan on low heat until it becomes a syrup. If you're using sugar, you can skip this step.

3. Add the cooked chana dal to the melted jaggery or sugar and mix well. Cook for a few more minutes until the mixture thickens and becomes a soft, dough-like consistency. Remove from heat after mixing some cardamom powder and a pinch of salt and let it cool.

For the Dough:

1. In a mixing bowl, combine the whole wheat flour, a pinch of salt, and 1-2 teaspoons of ghee.

2. Gradually add water and knead the dough until it becomes smooth and pliable. Cover the dough  with a damp cloth and keep it in rest for about 15-20 minutes.

Assembling and Cooking:

1. Divide the dough and filling into equal-sized portions. First roll the dough into small balls and make them slightly flatten. Take a portion of the filling and place it in the center of the flattened dough.

2. Seal the edges of the dough carefully around the filling, be sure that there are no gaps. Now  flatten the filled dough ball gently with your hands.

3. Heat a griddle or a non-stick pan over medium heat and add a teaspoon of ghee or oil.

4. Place the stuffed dough on the griddle and cook until it turns golden brown on one side.

5. Flip it over when this side is golden brown and cook the other side until it's also golden brown. Add more ghee or oil if require.
 
6. Remove the Bobbatlu from the griddle and place them on a plate lined with paper towels to remove any excess oil or ghee.

7. Serve the Bobbatlu hot or at room temperature. They are delicious on their own or with a dollop of ghee.
