During Summer season,  we always crave for some cool drinks which can  hydrate our body and also quench our thirst.  A delicious Indian Summer Drink can  helps us cool down. We can easily make these delicious Summer Drinks with very few and easily available ingredients.

Some of the easily available  ingredients  like Curd, Raw Mango, Milk, Lemon, Fruits, Coconut can be  used to make the drinks. India has huge varieties of  spices, herbs and   unique fruits. Using these fresh produce and spices together, we can easily make delicious refreshing drinks. 

North Indian Lassi and  Buttermilk drinks of  the South  India are all yogurt based drinks. You can make the Lassi  more flavored with cardamom, rose water, saffron etc. Addition of curry leaves or mint also can  enhance flavor in a buttermilk. 

Kesar Pista Lassi is one of my favorite summer drinks which  you can make at home to beat the scorching heat. Kesar Pista Lassi is a delicious and refreshing Indian yogurt-based drink that combines the flavors of saffron (kesar) and pistachios (pista). Kesar Pista Lassi Recipe - Recipica


Ingredients of Kesar Pista Lassi :

For the Lassi:

  • 1 cup plain yogurt (preferably full-fat)
  • 1/2 cup milk (adjust to achieve your desired consistency)
  • 2 tablespoons sugar (adjust to taste)
  • A pinch of saffron threads (kesar)
  • 10-12 unsalted pistachios (pista)
  • A few ice cubes (optional)

For Garnish (optional):

  • Crushed or chopped pistachios
  • A few saffron strands

Instructions of Making Kesar Pista Lassi:

1. Soak the Saffron: 

In a small bowl, add a pinch of saffron threads to a tablespoon of warm milk. Let it soak for 15-20 minutes. This will allow the saffron to release its beautiful color and flavor.

2. Prepare the Pistachios: 

Grind the pistachios into a fine powder using a blender or mortar and pestle. Keep some aside for garnish if you'd like.

3. Blend the Lassi: 

In a blender, combine the plain yogurt, milk, sugar, soaked saffron (along with the milk), and the ground pistachios. If you want a thicker lassi, use less milk, and if you prefer it thinner, add more milk. You can also add a few ice cubes at this stage for an extra chill. Now Blend everything until it become smooth and creamy. Taste it now and  adjust the sweetness by adding more sugar according to your choice if you need.

4. Chill You Lassi:

You can refrigerate the lassi for a while before serving, or serve it immediately with some ice cubes.

5. Serve Kesar Pista Lassi : 

Pour the Kesar Pista Lassi into glasses. If desired, garnish with crushed or chopped pistachios and a few saffron strands for an elegant touch.
