Gongura Pachadi Recipe | Andhra Style Gongura Chutney

Gongura Pachadi is a popular Andhra-style chutney made from sorrel leaves (gongura) and a blend of spices. It's known for its tangy and spicy flavors and is typically served as a condiment with rice or Indian bread like dosa or idli. Here's a  recipe for Gongura Pachadi:

Ingredients of Gongura Pachadi :

  • 2 cups fresh gongura leaves (sorrel leaves), washed and finely chopped
  • 2-3 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 2-3 dry red chilies (adjust to taste)
  • 2-3 cloves of garlic, minced
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 1-2 teaspoons jaggery or sugar (optional, to balance the tartness)
  • Water (as needed)

Instructions of making Gongura Pachadi:

1. Prepare Gongura Leaves:

  • Wash the gongura leaves thoroughly and remove the stems. Finely chop the leaves. You can use both the green and red varieties of gongura leaves for this recipe.

2. Sauté Gongura Leaves:

  • Heat 2-3 tablespoons of oil in a pan or kadai over medium heat.
  • Add mustard seeds and cumin seeds. Let them splutter.
  • Add the minced garlic and sauté for a minute until it becomes fragrant.
  • Add the chopped gongura leaves and sauté for 5-7 minutes until they wilt and become soft. Keep stirring occasionally to prevent sticking.

3. Add Spices:

  • Add dry red chilies, turmeric powder, and salt to the sautéed gongura leaves. Mix well.

4. Cook Gongura Leaves:

  • Continue to cook the gongura leaves for another 5-7 minutes until they are fully cooked and the raw sourness of the leaves is reduced.

5. Cool and Grind:

  • Allow the cooked gongura mixture to cool to room temperature.
  • Once it's cooled down, transfer it to a blender or mortar and pestle. Grind it into a coarse paste. You can add a little water if needed to help with the grinding process.

6. Adjust Taste:

  • Taste the gongura pachadi and adjust the seasoning. If it's too tart, you can add a teaspoon or two of jaggery or sugar to balance the flavors. Mix well.

7. Serve Gongura Pachadi  :

  • Transfer the Gongura Pachadi to a serving bowl. It can be served at room temperature or slightly chilled.
  • Serve it as a side dish with hot steamed rice or as a condiment with dosa, idli, or other South Indian dishes.
