Ingredients Gongura Mutton:

  • 500 grams of mutton pieces, cleaned and washed
  • 2 cups gongura leaves (sorrel leaves), washed and chopped
  • 2-3 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 2-3 dry red chilies (adjust to taste)
  • 1 large onion, finely chopped
  • 2-3 cloves of garlic, minced
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 1 tablespoon tamarind paste or 1 small lemon-sized tamarind soaked in water
  • 1/2 cup water (adjust as needed)
  • Fresh coriander leaves for garnish

Instructions of making Gongura Mutton:

1. Prepare the Tamarind Paste:

  • If you're using tamarind pulp from tamarind pods, soak a small lemon-sized ball of tamarind in warm water for about 15 minutes. Squeeze the tamarind to extract the pulp and discard any seeds or fibers.

2. Sauté Gongura Leaves:

  • Heat 2-3 tablespoons of oil in a heavy-bottomed pan or pressure cooker over medium heat.
  • Add mustard seeds and cumin seeds. Let them splutter.
  • Add dry red chilies and minced garlic. Sauté for a minute or until the garlic becomes fragrant.
  • Add the chopped gongura leaves and sauté for about 5-7 minutes until they wilt and become soft. Keep stirring occasionally.

3. Add Spices and Onion:

  • Add the turmeric powder and red chili powder to the sautéed gongura leaves. Mix well.
  • Add the finely chopped onion and cook until it turns translucent.

4. Cook the Mutton:

  • Add the cleaned mutton pieces to the pan. Sauté the mutton for a few minutes until it changes color and the spices coat the meat.
  • Pour in the tamarind paste or tamarind pulp and mix well.

5. Pressure Cook the Mutton:
