Ingredients of Egg Vindaloo:
- 6 hard-boiled eggs, peeled and halved
- 2 finely chopped large onions
- 4 tomatoes, pureed
- 3-4 minced cloves of garlic
- 1-inch piece of grated ginger
- 3-4 tablespoons vindaloo paste (store-bought or homemade)
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (you may adjust according to your taste)
- 1/2 cup white vinegar
- Salt to taste
- 3 tablespoons oil
- Fresh cilantro for garnish
Instructions of Making Egg Vindaloo:
- Heat oil in a pan over medium heat. Add chopped onions to the oil and sauté until it becomes golden brown.
- Add minced garlic and grated ginger now and sauté for another 2 minutes or until the raw smell of ginger disappears.
