Ingredients of Mumbai Style Egg Bhurji:
- 4 large eggs
- 2 tablespoons oil
- ½ teaspoon salt
- 1 tablespoon butter (salted or unsalted)
- 1 teaspoon coriander powder
- ¼ teaspoon turmeric powder
- ½ teaspoon Kashmiri red chili powder
- 2 teaspoons pav bhaji masala powder
- ½ cup chopped onions
- 2 teaspoons finely chopped green chilies
- 1 teaspoon finely chopped ginger
- 1 teaspoon finely chopped garlic
- ½ cup finely chopped tomatoes
- 1 teaspoon freshly squeezed lime juice
- 2 tablespoons chopped cilantro (fresh coriander leaves)
Instructions of Making Mumbai Style Egg Bhurji:
Preparation:
- Take a medium mixing bowl and whisk eggs and salt using a wire whisk. Set aside.
- Chop onions, tomatoes, ginger, garlic and green chilies finely.
Cooking Process:
- Take a nonstick pan and heat oil and butter over medium-high heat.
- When the oil is hot, add onions and sauté until the onions turn translucent, stirring frequently.
- Add green chilies, ginger and garlic when the onions are translucent, and sauté until the onions become light brown in color. Don't forget to stir frequently.
- Now, add tomatoes to this pan and cook for another minute. Use the back of the ladle to mash the tomatoes while cooking.
- Next, add turmeric powder, coriander powder, pav bhaji masala, and Kashmiri red chili powder and cook for 40-50 seconds, stirring it continuously.
- Reduce the heat to medium-low after 40-50 seconds .
- Add the whisked eggs to the pan and stir continuously to scramble.
- Cook the eggs using the ladle until the eggs are fully cooked and blend with the masala.
- Add lime juice and garnish with fresh coriander leaves (chopped cilantro) and mix well.
Serving of Egg Bhurji:
- Serve Mumbai style Egg Bhurji hot with pav or any bread of your choice.
- You can also add a dollop of butter while serving for extra richness.
