Amritsari Fish Fry is a popular Indian appetizer as well as a famous street food known for its flavorful and crunchy texture. This dish is made with boneless fish pieces, marinated in a spiced yogurt mixture, and then coated with a special gram flour (besan) batter before being deep-fried to perfection. Ingredients of Amritsari fish fry:
For the Marinade:
- 500 grams boneless fish fillets (cut into small pieces)
- 1/2 cup thick yogurt
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 tablespoon lemon juice
- Salt to taste
For the Batter:
- 1 cup gram flour (besan)
- 2 tablespoons rice flour
- 1 teaspoon carom seeds (ajwain)
- 1/2 teaspoon baking soda
- Salt to taste
- Water (as needed to make a thick batter)
For Frying:
- Vegetable oil for deep frying
Instructions of Making Amritsari Fish Fry :
1. Marinating the Fish:
- In a bowl, take yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, coriander powder, cumin powder, lemon juice, salt to taste and mix all these marinade well.
- When all the marinating ingredients are well mixed, add fish pieces to the marinade and coat them properly.
- Now cover the bowl and keep it in refrigerator for at least 1 hour, allowing the flavors to infuse in the fish pieces.
2. Preparing the Batter:
- In a separate mixing bowl, combine gram flour (besan), rice flour, carom seeds (ajwain), baking soda, and salt to taste.
- Gradually add water and whisk to make a smooth and thick batter and the thickness of the batter should be such enough that it can coat the back of a spoon.
3. Frying the Fish:
- Heat vegetable oil in a deep frying pan or kadai over medium-high heat.
- Dip each marinated fish piece into the prepared batter, ensuring it's evenly coated.
- Carefully slide the coated fish pieces into the hot oil one by one. Do not overcrowd the pan; fry in batches if necessary.
- Fry the fish until they turn golden brown and crispy, which should take about 3-4 minutes per side.
- Remove the fried fish by a slotted spoon from the oil and keep them on a plate covered with paper towels to drain excess oil.
